Lately Mexican food has been
getting a bad rap on the fat content of its fare. Not all
Mexican food is loaded with fat.
I want you to know a little more about the way we prepare your
food. The Last Concert Cafe buys only the highest quality of
lean fresh meats. We trim all visible fat. Our chicken is
delivered to us boneless and skinless which cuts down on the fat
content of the finished product. Our burgers are made only with
black angus beef. Our cheese is the highest quality Wisconsin
Cheddar and the highest quality of Monterrey Jack. We do not use
processed cheeses in our dinners. We offer feta cheese, a very
low fat cheese on all of our dishes. We use only olive oil to
sauté or season or marinate our food. Our pintos are refried not
in lard but in olive oil. The refrying process gives them a rich
full bodied flavor. Our black beans are seasoned with a small
amount of lean bacon. We fry our own taco shells and tostada
shells in peanut oil, a delicious natural oil containing no
trans fats. Our produce is bought from the local framers market
every day. We do not purchase already prepared foods we marinate
our own meats, chop our own vegetables and make our own
desserts. We have added many vegetarian choices, with grilled
vegetables or soy protein. We make everything from scratch. We
believe food is better for you when prepared by caring hands and
happy people. We have been preparing food in this manner since I
came to the Last Concert Cafe in1986.
